Minimal - Bean to Bar Chocolate -, a Japanese specialty chocolate brand operated by βace Inc. (Shibuya, Tokyo; CEO: Takashi Yamashita), is set to release a seasonal 'Fruit and Chocolate Parfait - Melon -' at its Patisserie Minimal Soshigaya-Okura location starting June 6, 2026. The parfait features the rare 'Yuka' melon, cultivated by Farm Nagasu in Ibaraki Prefecture for over half a century. Reservations are scheduled to open on May 30, 2026.
The star of the dish is the elusive 'Yuka' melon. While melons are typically difficult to pair with dark chocolate due to their high water content and delicate flavor, Minimal has achieved a perfect balance using its 'CLASSIC' chocolate, which lacks excess fat and complements the melon's natural sweetness.
Cultivated in Hokota, Ibaraki, the 'Yuka' melon is grown with extreme care, limiting production to just two fruits per vine to concentrate nutrients. The 12-layer parfait also incorporates notes of elderflower, Dong Ding Oolong tea, mint, and lemon to create a complex and evolving flavor profile.
