Suiran Luxury Collection Hotel Kyoto (Location: Arashiyama, Ukyo-ku, Kyoto; General Manager: Shinobu Takagi) will begin selling seasonal 'Hassui Shaved Ice' on Monday, June 15, 2026, at 'Saryo Hassui,' a cafe standing along the Hozu River. This summer, two varieties will be available: the newly introduced 'Mandarin Orange with Yogurt Espuma' and the perennial favorite 'Matcha.'
'Hassui Shaved Ice' is a seasonal treat made with pure ice derived from deep natural water from Shinshu, shaved fluffy for a light melt-in-the-mouth texture.
The new 'Mandarin Orange with Yogurt Espuma' offers a refreshing taste where the sweetness of juicy citrus is enhanced by the crisp acidity of yogurt. Inside the ice, mandarin jelly is tucked away, while the surface is layered with homemade mandarin syrup and yogurt espuma, topped with juicy fruit flesh.
The 'Matcha' flavor has been renewed for an even richer profile. Using Uji Matcha in the syrup, it features a bold flavor and fresh aroma. Hidden inside the ice are rich matcha ice cream and bean paste from the long-established Kyoto confectionery 'Kameya Yoshinaga,' allowing guests to enjoy the lingering harmony of matcha's bitterness and the elegant sweetness of the bean paste.
