Less than half of consumers eat processed fish products once a week or more, with higher rates among older age groups. In the past year, over 80% ate "chikuwa," over 70% ate "kamaboko," and less than 60% ate "satsuma-age, tsuke-age."
The appeal of processed fish products is "provides high-quality protein" at about 46%, followed by "can be eaten as is" and "good taste/like the taste" each at less than 40%.
MyVoice Communications Co., Ltd. (Chiyoda-ku, Tokyo, President and Representative Director: Shintaro Shimizu) conducted its sixth internet survey on "Usage of Processed Fish Products" from June 1st to 7th, 2026.
The survey asked about usage of processed fish products, their appeal, and points of dissatisfaction. We are pleased to announce the results.

◆ Frequency of Eating Processed Fish Products
Less than half of consumers eat processed fish products once a week or more. This figure is between 50% and over 60% for those in their 60s and 70s.
"Never eat" is higher among younger demographics, particularly over 20% for men in their 30s.
◆ Processed Fish Products Eaten in the Past Year
In the past year, the processed fish products eaten (multiple responses) were: "chikuwa" at 80.5%, "kamaboko" at 70.8%, and "satsuma-age, tsuke-age" at 58.6%.
"Hampen, kurohampen" was higher in the Kanto and Chubu regions, and "naruto" was higher in Hokkaido, Tohoku, and Kanto, while both were lower in western Japan. "Datemaki" also tended to be lower in western Japan.
"Gobou-ten" and "jako-ten" were higher in western Japan, and "gyokatsu" was higher in the Chugoku and Shikoku regions.

◆ Occasions for Eating Processed Fish Products and Purchase Priorities
We asked consumers who eat processed fish products about the occasions for eating them and their purchase priorities.
The occasions for eating processed fish products (multiple responses) were: "dinner" at 80.4%, and "lunch" and "snacks" each at around 20%. "Side dish for bento boxes" was higher among women in their 10s to 40s.
Purchase priorities for processed fish products (multiple responses) were: "taste" at 69.6%, "price" at 54.7%, followed by "ingredients," "expiration/best-by date," "quantity/size, sales unit," and "country of origin" each at around 20%.
◆ Appeal of Processed Fish Products
The appeal of processed fish products (multiple responses) was: "provides high-quality protein" at 46.2%, followed by "can be eaten as is" and "good taste/like the taste" each at less than 40%.
"Provides high-quality protein," "can be eaten as is," and "easy to prepare" were higher among women and older age groups. Additionally, "many dishes and uses" and "long shelf life" were also higher among women and older age groups.

◆ Dissatisfaction with Processed Fish Products
Over 40% of consumers have some dissatisfaction with processed fish products.
The points of dissatisfaction (multiple responses) were: "concerned about food additives" at 15.4% and "concerned about salt content" at 12.9%. These items were higher among women and older age groups.

Kurohampen. Frying it gives a good texture. (Male, 22)
Adding kamaboko instead of chicken in oyakodon gives a light flavor and smooth texture that makes you want to eat it in early summer. (Male, 36)
I eat ganmodoki seasoned with mentsuyu. (Male, 49)
Jako-ten. Put jako-ten in a frying pan with oil, add salt and pepper, and grill. This is the most delicious way to eat it. (Male, 73)
Sandwich red ginger in chikuwa and deep-fry it. Mix crab sticks with cucumber. (Female, 23)
Fish sausage. Place it on toast, grill it, and top with mayonnaise and ketchup. It's very delicious. (Female, 30)
