Ninben Co., Ltd. (Chuo-ku, Tokyo; President: Ihee Takatsu) will launch 'Dashi Hiyashiame' at its 'Nihonbashi Dashiba Honten' starting June 1, 2026 (Monday). Under the concept of 'Ichiju-Ippan' (one soup, one rice bowl), Nihonbashi Dashiba Honten offers a variety of menus that explore the potential of dashi.

This product is Ninben's unique take on the traditional Kansai 'Hiyashiame' (chilled malt syrup drink), crafted with freshly shaved Honkare-bushi (dried bonito), malt syrup, san-on sugar, and ginger. Customers can enjoy the mellow sweetness of the malt syrup and sugar, gently enveloped by the refined umami of the dashi.

This is a chilled drink made by boiling down malt syrup and san-on sugar, then diluting it with bonito dashi. It creates a refreshing yet deep flavor profile with a harmonious blend of ginger and dashi. We hope you enjoy it during the hot summer.

What is Hiyashiame? A chilled drink made by dissolving malt syrup in water and seasoning it with ginger, popular in the Kansai region for generations. In Kansai, it is a summer staple sold at festivals and supermarkets.

[Commitment from the Menu Developer] We developed this drink with the desire to provide a refreshing cold beverage for the hot summer that features dashi as the main ingredient. It combines the refreshing flavor of ginger with the umami of dashi, creating a soothing drink for the body tired from the summer heat.

[Why We Recommend It] By adding Honkare-bushi umami to Hiyashiame, it offers a mellow and deep sweetness. While familiar in Kansai, Hiyashiame might be less known in the Kanto region. Please enjoy this unique 'dashi-infused' experience.

[Recommended For] Perfect for a break during Nihonbashi sightseeing, a shopping stop, or a refreshment break during work.

'Honkare-bushi' Aged via Mold and Sun-drying At Ninben, we call katsuobushi that has undergone at least four rounds of mold-cultivation and sun-drying 'Honkare-bushi.' Finished over 4 to 6 months, this process results in a refined aroma with minimal fishy odor. Enjoy the elegant and mellow flavor preferred by high-end Japanese restaurants.

Nihonbashi Dashiba Honten opened in 2010 alongside the opening of COREDO Muromachi 1 as Ninben's first food service venture—a place for a dashi community to learn about, enjoy, and taste dashi. Popular for its authentic bonito broth at 150 yen per cup, it has been patronized by many as a destination for genuine dashi taste.

Menus such as bonito broth, monthly dashi soup, and katsubushi-meshi all use the carefully selected Honkare-bushi that Ninben is committed to.

As a bonito specialty shop with over 300 years of history, Ninben aims to become a 'Katsuobushi & Dashi Life Design Company' that proposes the infinite possibilities of bonito and dashi in every dining scenario.
