A Day Beyond Time, Connecting Hearts

Kumamoto Hotel Castle (located in Chuo Ward, Kumamoto City, Kumamoto Prefecture) will host the second edition of its special restaurant initiative 'The Timeless Table' on Sunday, August 30, 2026, at its Japanese restaurant 'Hosokawa,' following the success of last year's August event.

Leading this second edition are Chef Tatsushi Teshima, owner-chef of 'Restaurant PAGES (Restaurant Pages),' based in Paris, and Chef Yoshihiro Maruyama, owner-chef of 'Chisoumaru' in Kumamoto—both returning from last year's collaboration.

Born in Kumamoto and now active on the global stage from his base in Paris, Chef Teshima joins forces with Chef Maruyama, who upholds the philosophy of 'reflecting nature in cuisine' and continuously pursues culinary excellence through deep engagement with Kumamoto's local terroir and producers.

The distinct sensibilities and techniques honed in different lands and environments will converge at Hosokawa, Kumamoto Hotel Castle's Japanese restaurant, to create an exclusive, one-day-only course menu.

Complementing the cuisine are special beverages, including 'Ubushuna,' a premium sake from Hanakago Sake Brewery—one of Kumamoto's treasured sake producers—as well as limited-edition cocktails and pairing drinks prepared exclusively for this event.

Each dish carries the essence of Kumamoto's natural landscape, the dedication of its producers, and the memories and emotions of the chefs. Through food and drink, guests will experience a profound, story-rich culinary journey shaped by land and people.

[Chef Tatsushi Teshima Profile]

Born in Kumamoto Prefecture. Began his culinary training at age 19 at a French restaurant in his hometown.

While working as a chef, he developed a passion for wine and obtained his sommelier certification at age 23. Moved to France at age 26.

Started at starred restaurants in regional France, then trained at 'Restaurant Lucas Carton' in Paris, which held three Michelin stars at the time. Gained extensive chef experience across various restaurants.

Developed a deep interest in ingredients, studying butchery at Boucherie Hugo Desnoyer and learning about French seafood and vegetables at Terroir d'Avenir, while visiting numerous French producers. Expanded his interest beyond France, undertaking stages in various countries while preparing for independence.

In 2014, at age 37, opened Restaurant PAGES near the Arc de Triomphe in Paris's 16th arrondissement.

In 2015, received the 'Grand Chef de Demain' (Great Chef of Tomorrow) award from Gault & Millau.

In the same year, opened Bar à vin '116' next to PAGES. In 2016, just one and a half years after opening, Restaurant PAGES was awarded one star in the French Michelin Guide.

Also in 2016, appointed Kumamoto Goodwill Ambassador by the Mayor of Kumamoto City. In March 2017, received the highest honor at the Create Culinary Awards.

[Chef Yoshihiro Maruyama Profile]

Born in 1991 in Fukuoka Prefecture.

Trained at 'Kaishoku Michiba' in Tokyo, 'Warayaki Mikan' and 'Akasaka Komikan' in Fukuoka, then joined 'Ruri-AN' in Kumamoto. After serving as head chef there, he became independent and opened 'Chisoumaru' in Kumamoto.

In his cooking, he strives to 'reflect nature in cuisine.' He maintains deep connections with farmers, fishers, and potters he meets directly, advancing daily through collaborative growth.

Driven by a pure love for people, he aims to create dishes that nourish both body and mind, enabling diners to stay healthy and vibrant. Each plate goes beyond mere sustenance, honestly weaving in the blessings of the region and the producers' heartfelt dedication.

His deeply rooted local activities and proven talent have earned recognition: in 2024, he received the GOLD EGG award at 'RED U-35.' In 2026, he was selected to oversee in-flight meals for JAL's international economy and premium economy classes and to serve as the Kumamoto cuisine director for the cruise train 'Nanatsuboshi in Kyushu,' further expanding his influence.
