This exhibition showcases masterpieces of Japanese art, passed down through generations at the Great British Museum, one of the world's leading collections, as they return to Japan from across the sea. Inspired by the seasonal scenery and rich aesthetic sensibilities loved by the people of Edo, we have expressed this world through the delicate techniques and seasonal ingredients unique to Japanese cuisine. Notably, in a dish inspired by the masterpiece sliding door painting "Autumn and Winter Flowers and Birds" (Shuto Kachōzu Fūso) by the Kano school, the transition from autumn to winter is skillfully depicted using "nikogori" (jellied broth), elevating the artwork's world into a new viewing experience through food, utilizing the chef's sensitivity and skill. This menu, which extends the exhibition's inspiration into culinary art, offers a fascinating intersection of paintings and cuisine, sight and taste, with dishes created from the exhibition's featured works, alongside various Japanese dishes that evoke the sensibilities of the Edo period.

Nikogori [Common to Hyakka Ryoran Gozen and Kogabiyori Bento]

Expresses the colors from deep autumn to winter through the changes in the deep blue of the waterside. Shiitake mushrooms, carrots, chicken, and gold leaf are scattered to brilliantly accent the impression of flowers and birds.

A typical theme in Japanese art, "Four Seasons Flowers and Birds." This sliding door painting depicts a landscape from autumn to winter and possesses characteristics of Kano school works from the late Momoyama to early Edo periods. The subject matter includes geese, ducks, plovers, camellias, and plum blossoms by the water, with maple, hibiscus, and cypress trees in the mid-ground.

We have likened the letter to a "nama harumaki" (fresh spring roll), expressing the hidden love letter with carrots, mizuna, and edible flowers visible through the wrapper.

Kitagawa Utamaro, "Courtesan Reading a Letter"

This is a rare late work by the artist, depicting a courtesan engrossed in reading a letter. The elaborate depiction of her obi sash, adorned with patterns like plovers and the seven-star symbol, suggests a focus on creating a sense of opulence.

We have lovingly recreated the rounded figures of the mother and cub tiger by likening them to "tamagoyaki" (rolled omelet).

Maruyama Okyo, "Tiger Cub Ferrying" Screen

This work by Maruyama Okyo is based on a Chinese legend where a mother tiger, unable to leave her fierce cub behind with its siblings, made seven trips across the river to ferry all three cubs to the other side.
