Onfeet Co., Ltd., the official Japanese importer for Cambridge Distillery, will host a one-night-only collaboration event, "Iron Bay One-Night Pairing with Cambridge Distillery," on Tuesday, April 28, 2026, at the signature restaurant 'Iron Bay' on the 23rd floor of The Westin Yokohama. This special evening offers a marriage of wood-fired cuisine and gins from the distillery, which are served in Michelin-starred restaurants and five-star hotels worldwide.

Based in Cambridge, England, Cambridge Distillery was founded by William Lowe, who holds both Master of Wine and Master Distiller titles.

Using innovative vacuum distillation technology to extract botanical aromatic compounds without compromising their delicate scents, their gin has earned high acclaim from Michelin-starred restaurants and five-star hotels globally.

As the official Japanese importer, Onfeet Co., Ltd. has realized this event to bring the world of Cambridge Distillery to Japan.

The partner for this collaboration, The Westin Yokohama's signature restaurant 'Iron Bay,' features wood-fired and charcoal-grilled dishes crafted by Executive Chef Shota Yamashita, highlighting the flavors and aromas of seasonal and local ingredients. Since its opening, it has been chosen by many guests as a place to spend special moments.

23rd Floor Iron Bay: A Marriage of Cambridge Distillery Gin and Wood-Fired Grill

The course begins with the bounty of the sea. Following light dishes featuring salmon and botan shrimp, the main fish course features skewered red sea bream from Kanagawa Prefecture, with summer citrus (hyuganatsu) and fennel evoking the arrival of early summer.

The main meat course features venison from Doshi Village, grilled aromatically over a wood fire and accented with the refreshing notes of fermented green pepper.

Accompanying these dishes are three original cocktails using Cambridge Distillery gins provided by Onfeet Co., Ltd.: the "Three Seasons Gin," which expresses the changing seasons of Cambridge, and the "Truffle Gin," made with rare white truffles from Alba, Piedmont, Italy.

Each cocktail resonates with the aromas of the cuisine, allowing guests to experience "layers of aroma" throughout the entire course.
