Summer is the season when refreshing lemon desserts become irresistible. Many people look forward to seasonal treats like lemon cakes, lemon tarts, and lemon madeleines.

Yet, have you ever picked a dessert because it said 'lemon,' only to feel the lemon flavor was weaker than expected? Or found that despite an attractive appearance, you were left feeling slightly unsatisfied after eating it?

Of course, deliciousness is subjective. Still, we believe that if a dessert is labeled 'lemon,' it should deliver the refreshing aroma and zest that customers expect.

Born from this belief is Ginza Le Blanc’s summer-limited 'Lemon Confection Series.'

Summer-Limited 'Lemon Rare Cheesecake' / Ginza Le Blanc

We aim to exceed expectations in both 'appearance' and 'taste.'

At Ginza Le Blanc, we have long focused on creating simple Western confections that highlight the natural qualities of ingredients. We’ve always had confidence in our flavors.

However, with more people choosing products online and via social media, visual appeal has become a crucial factor in attracting customers. That said, we don’t merely chase after flashy designs. While preserving the refined elegance characteristic of Ginza Le Blanc, we also value creating a beauty that makes people think, 'I want to try this immediately.'

Our first challenge in this direction was the 'Lemon Rare Cheesecake.' We wanted it to instantly communicate 'lemon cake' at first glance. To achieve this, we placed sliced lemons on top. But this alone resulted in a monotonous yellow tone. So, we added blueberries to bring a summery pop of color. To prevent the blueberries from appearing to float, we scattered finely crushed pistachios throughout. Interestingly, the pistachios serve another purpose: their fine texture ensures they don’t overpower the palate, instead enhancing the lemon’s freshness and the mousse’s smoothness. Additionally, we used lavender honey—known for its floral aroma and refreshing aftertaste—instead of regular honey in the mousse. This elevates the lemon aroma and ensures a pleasant experience until the very last bite.

Our goal isn’t for customers to say, 'It tasted better than it looked.' Instead, we aim to deliver exactly the deliciousness customers expect from the photos. That is the essence of Ginza Le Blanc’s confectionery philosophy.

Summer-Limited 'Lemon Madeleine' / Ginza Le Blanc

'Lemon Madeleine' was born from the idea that 'baked goods should also feel refreshing in summer.'

Ginza Le Blanc rarely releases seasonal baked goods. That’s precisely why we wanted to create a baked treat people would crave in summer. Rather than inventing something entirely new, we reimagined the beloved classic madeleine with a summery twist. This concept gave birth to the 'Lemon Madeleine.'

During development, we taste-tested various lemon-flavored baked goods available on the market.

We noticed that many products labeled 'lemon flavor' surprisingly lacked a strong lemon presence. So, we focused on creating a recipe that delivers a clear, refreshing lemon aroma.

Furthermore, we coated the madeleines with lemon-flavored white chocolate. The bright acidity of lemon blends with the gentle sweetness of white chocolate, resulting in a light, enjoyable baked treat perfect for hot weather.

We also prioritized a finish that makes you want 'just one more.'

This lingering satisfaction is a key point we carefully crafted into this madeleine.
