1. About the Sake Brewery "Kojima Sohonten" Kojima Sohonten Co., Ltd. is a sake brewery that has been brewing sake for over 400 years since its establishment in the second year of the Keicho era (1597) during the Azuchi-Momoyama period.
Using groundwater sourced from the snowmelt of Mount Azuma, located in the southern part of Yonezawa City, Yamagata Prefecture, as brewing water, we brew sake rooted in the natural environment of Yonezawa. As a "100% pure rice sake brewery" that produces only pure rice sake without using brewed alcohol, our main focus is brewing high-quality pure rice sake.
Furthermore, aiming for sustainable sake brewing, we have simultaneously achieved "zero waste from raw materials" and "carbon neutrality" through biogas power generation utilizing sake lees.
While making the most of nature's blessings, we are pursuing the ideal form of sake brewing to pass down to the next generation.
