France has terroir wine (Terroir), Japan has sake (Jizake). Then, what does Taiwanese local wine taste like? Shan Hai Lou, together with winemaker Chen Qianhao and sommelier Thomas Ho, has planned the 'The Lost Plate' Ultimate Terroir Wine Pairing Dinner. This banquet pairs five Taiwanese wines with classic Taiwanese dishes and unfolds the complete picture of Taiwan's terroir in five layers: microorganisms, sunlight, crops, climate, and time. This is not just a wine pairing, but a re-reading of the land. Why is it called 'The Lost Plate'? Shan Hai Lou believes that a complete local food culture is not just local dishes, but drinking the land's wine and eating the land's dishes. A hundred years ago, Taiwan had its own awamori, shochu, wine, and a deep fermentation culture. With the passage of time, these flavors have one by one disappeared from the dining table, leaving behind a plate without wine. This banquet is to bring back that half of the lost plate - to let the dishes and wine no longer just be 'pairings', but two languages that grow together on the same piece of land.
