TAMC notes that Moso bamboo shoots are the largest edible variety. Though their texture is coarser with more fiber, they are particularly sweet and crisp. To remove bitterness, TAMC recommends a practical cooking tip: after purchase, cut the bamboo shoots into chunks or strips and blanch them in water. This effectively removes bitterness, enhancing the sweetness and smoothness whether used in stir-fries or soups.

- Peel and Blanch: After bringing them home, peel the shoots and place them in cold water, bringing to a boil. - Change Water and Reboil: After boiling, replace the water and continue boiling for about 30 minutes before using in cooking. - Airtight Storage: If not using immediately, let the shoots cool after blanching, then place in sealed bags for refrigeration or freezing.
