Tanico Corporation (Head Office/Shinagawa-ku, Tokyo; President and CEO Shuichi Taniguchi), a manufacturer of commercial kitchen equipment, will open "Fanson" - Fantudio Village School, a learning program for chefs and aspiring chefs, at "Fantudio Takamatsu," operated within the commercial facility "Kawaramachi FLAG" (Kotohira Electric Railway Co., Ltd. Head Office/Takamatsu City, Kagawa Prefecture) in Takamatsu City, Kagawa Prefecture. "Fanson" will offer opportunities to learn the secrets of creating successful restaurants and the keys to long-term sustainability from top industry professionals.

"The Future of Restaurants, Starts Here"

Three Objectives of Fanson:

1. To enable chefs to become strong business owners, and for aspiring chefs to gain guidance as future managers. Participants can learn first-class techniques and ways of thinking, including cooking and management, from top industry professionals.

2. To foster a community where challenges in restaurant management can be shared and solved together. This initiative creates connections where individuals with shared aspirations can meet, inspire each other, and grow.

3. To pass on regional food culture to the future. We will jointly take on the role of connecting food and region, and passing on the region's food culture to the next generation.

Through continuous sessions, Fanson aims to support the growth of chefs and build a network that supports the regional food industry.

"Content"

Lectures will be held combining classroom learning, cooking, and tasting. Instructors will share their experiences, beliefs, techniques, and management philosophies with participants.

Norio Nakagawa, Sushi Nakagawa (Takamatsu City, Kagawa Prefecture)

Instructor Schedule: August 31 (Mon) 13:00-15:00

Born in Tokushima Prefecture. After working at Japanese restaurants in Osaka and sushi restaurants in Takamatsu, he became independent at the age of 26. Food enthusiasts gather for his pairings of Setouchi seafood with Shikoku's unique sushi using citrus and olive oil, and the sake "Kaishin."

Ryuji Mitsuhata, Uroharu (Kurashiki City, Okayama Prefecture)

Instructor Schedule: September 30 (Wed) 13:00-15:00

Born in Kurashiki City, Okayama Prefecture. The 5th generation owner of a fish store that has been in business for 128 years. Driven by a desire to pass on the deliciousness and culture of local fish to the next generation, he teaches regional cuisine to restaurant owners. He is preserving Okayama's food culture.

Keisuke Nishimori, Maruni Dakigashiwa (Kyoto City, Kyoto Prefecture)

Instructor Schedule: October 19 (Mon) 13:00-15:00

Born in Kagawa Prefecture. While attending confectionery school in Osaka, he decided to pursue a career in Japanese sweets. After training at various shops with distinct styles such as Kameyayoshichō, Oimatsu, and Demachi Futaba, he opened his own establishment in 2021.

Ryohei Hayashi, Tenoshima (Minato-ku, Tokyo)

Instructor Schedule: November 2 (Mon) 14:00-16:00

Born in Kagawa Prefecture. Raised in Okayama Prefecture. After graduating from university, he joined the traditional restaurant "Kikunoi" and studied under Mr. Yoshihiro Murata. He has been involved in Japanese food promotion events in over 20 countries and became independent in 2018. He has maintained one Michelin star for seven consecutive years since 2019.
