Starting July 1, 2026 (Wed), we will begin selling our "Now in Season! July Limited Menu," featuring "Kyushu Saba" and "Live-Caught Conger Eel" to blow away the midsummer heat.
The theme for July is "Seasonal Stamina and Artisan Skill" to overcome summer with the hearty blessings of the sea. We offer three preparations using "Toro Saba," which is raised in the rich seas of Kyushu and stores exquisite fat year-round, and tempura made with naturally "live-caught conger eel" of outstanding freshness, fried with summer vegetables. We deliver the delicious tastes of Japanese summer with overwhelming izakaya value, making cold beer and local sake even more enjoyable this season.

"Kyushu Toro Saba" with Overwhelming Fat Content, Carefully Prepared In-House
While mackerel is often associated with autumn and winter, the "Kyushu Toro Saba" carefully selected this time is characterized by its surprisingly high-quality fat content even in midsummer. Artisans meticulously debone the fish while assessing its condition and remove excess drip, concentrating only the clear umami without the characteristic odor of blue fish. The toro saba, finished with the artisan leaving the beautiful "silver skin" intact to the utmost, can be enjoyed in three different styles: "Goma Saba" (sesame mackerel) with authentic sauce, "Sashimi" to simply feel the power of the ingredients themselves, and "Nigiri Sushi" to savor the harmony with the sushi rice.
"Live-Caught Conger Eel" Crisply Paired with Refreshing Summer Vegetables
We use natural conger eel with a refined umami, unique to live-caught fish. When cooked, the flesh becomes surprisingly fluffy. Our artisans prepare it as a light "thin batter" tempura. Served with the freshest summer vegetables of the season (eggplant and okra), we deliver the freshly fried deliciousness that seals in the ingredients' moisture.
