Following the popular 'Chua O Chocolat,' the long-awaited new macarons crafted by Pastry Chef Hirokazu Sato, who honed his skills at renowned Parisian patisseries, have finally arrived. This collection represents the culmination of Chef Sato's deep expertise in macarons—his specialty—along with years of accumulated technique and refined aesthetic sense. Five distinct flavors that carefully highlight the unique characteristics of different ingredients, while achieving both delicate texture and concentrated taste. Rooted in French pastry tradition, Chef Sato's signature approach shines through in the thoughtful pairing of ingredients and contrasts in texture. 'Milk Praline' features house-made praline made from caramelized and crushed hazelnuts; 'Sencha' uses fragrant Yame-grown green tea from Fukuoka, adding depth to the macaron's flavor; 'Raspberry' harmonizes a mild white chocolate-based raspberry ganache with the bright acidity of fruit jelly; 'Vanilla' showcases a rich white chocolate ganache made with generously used premium vanilla beans; 'Orange Citron' offers a refreshing citrus blend of orange cream and house-made lemon confit. Began his career as a pastry chef at 'Maxim's de Paris' in Ginza. Captivated by the profound world of French pastries during ten years of training, he moved to France. Since its founding in 2000, he served as sous-chef at 'Patisserie Sadaharu Aoki Paris,' newly established in Paris, and contributed to launching stores across Japan. He pursues cakes with concentrated flavor by carefully drawing out the inherent qualities of ingredients and combining elements with contrasting textures. Known for simple, stylish designs that avoid ornate decoration, his work has earned high praise from many customers. His specialties include cakes and macarons that highlight the rich aroma and depth of chocolate. He continues to deliver memorable flavors with delicate textures to a wide fanbase. Since August 2025, he has served as Pastry Chef at Yokohama Bay Sheraton Hotel & Towers.
