Savor Hokkaido's Seasonal Bounty: A Full Array of Summer Flavors

Yokohama Bay Sheraton Hotel & Towers will host the "Summer Hokkaido Fair: Northern Hokkaido ~Rumoi, Soya~" at its all-day dining restaurant "Compass" (2F) from July 11, 2026 (Sat) to October 16 (Fri). Please enjoy this summer's exclusive, luxurious, and high-quality dining experience, savoring the seasonal blessings nurtured by the northern land with all five senses.

This fair focuses on the Northern Hokkaido ~Rumoi, Soya~ area, nurtured by the northernmost sea breezes and magnificent nature of Hokkaido, offering a diverse menu that captures the essence of Hokkaido in summer, utilizing fresh seafood and local produce.

In the Soya area, which the chef visited for the first time, the "Tako Shabu" originating from Wakkanai was particularly noteworthy. Pacific octopus, which is in season from summer to autumn, is characterized by its plump thickness and tenderness, with exceptional freshness. Thinly sliced fresh octopus, dipped in piping hot broth, releases a pleasant texture and concentrated umami. The Rumoi area will feature dishes that fully bring out the charm of its representative seafood. "Tako Meshi Paella," which highlights the deep flavor of octopus, and "Sweet Shrimp and Hairy Crab Americaine Spaghetti," where the elegant sweetness of sweet shrimp and the rich umami of hairy crab meld together, are just some of the dishes that fully utilize the blessings of the sea, delivered in Compass's unique style. Furthermore, Hokkaido-produced natural bluefin tuna, known as the "black diamond," along with Pacific bluefin tuna from Uchiura Bay and Pacific octopus, will be served as nigiri sushi with sushi rice seasoned with red vinegar. "Hakodate Onuma Beef Stone Grill Steak," characterized by its fine-grained, tender meat, will also be available as much as you like, and for dessert, the rich and elegantly sweet "Red Meat Melon" will be offered. Please also enjoy the popular "King Crab." Additionally, a variety of dishes including "Fugu Katsu" and "Frankfurters" made with Pacific octopus landed by fishermen involved in the sustainable fishing project "ReTAKO" (*1), which aims to connect the rich sea to the future, will be available, allowing you to savor seafood, land produce, and B-class gourmet dishes. During weekday lunchtimes, you can enjoy "Katte Don," where you can choose your toppings from nine varieties.
