Held every Wednesday and Thursday at the 'Sea Wind' Lounge (2F), this event celebrates the Shine Muscat—a fruit renowned for its jewel-like luster, refreshing fragrance, and juicy sweetness. Pastry Chef Sato has carefully selected complementary ingredients to highlight its unique qualities, crafting 10 distinctive desserts. Guests can indulge in an elegant evening of refined sweets and satisfying light meals—an exclusive summer experience.
The highlight of this year’s menu is the special dessert, 'Shine Muscat Sabayon ~with Mascarpone Cream and Vanilla Ice Cream~.' Homemade brioche is soaked in orange syrup and filled with orange custard cream, then topped with smooth mascarpone cream, vanilla ice cream, and fresh Shine Muscat. The harmonious blend of citrus tang and muscat sweetness creates a sophisticated flavor profile. Additional offerings include a French-style 'Fraisier' showcasing the fruit’s beautiful cross-section, and Chef Sato’s signature macarons filled with seasonal grapes—each dessert celebrating the season’s bounty.
The buffet also features savory highlights such as slow-roasted 'Baby Back Ribs' and a rotating monthly specialty soup. Guests can enjoy freshly baked hotel-made favorites from the in-house patisserie 'Dore,' including the popular 'Chapo' and 'Curry Pan,' served hot from the oven.
Amid the refreshing ambiance of summer, guests are invited to savor these exquisite sweets in the open and airy 'Sea Wind' Lounge, featuring an 8.5-meter-high ceiling, perfect for intimate gatherings.

Chef Sato began his career as a pastry chef at 'Maxim’s de Paris' in Ginza. Drawn to the depth of French patisserie, he moved to France for training. From 2000, he served as sous-chef at the opening of 'Sadaharu Aoki Paris,' contributing to the launch of multiple locations in Japan. He focuses on highlighting the natural flavors of ingredients, combining contrasting textures to create rich, concentrated flavors. Known for his simple, stylish designs without excessive decoration, his signature creations include chocolate cakes and macarons with deep, aromatic profiles. Since August 2025, he has served as Pastry Chef at Yokohama Bay Sheraton Hotel & Towers, delivering unique, world-class desserts that reflect Yokohama’s cosmopolitan spirit.
