Nada-Man and Youki Food Present the 'Kohaku' Special Course: A Harmonious Blend of Japanese Cuisine and Global Seasonings

Youki Food Co., Ltd. and Nada-Man Co., Ltd. have announced a collaboration to offer a special course, 'Miracle Feast Kohaku,' featuring Youki Food products, available for a limited time from Saturday, May 16, 2026, to the end of June.

This course is a new culinary experience that combines traditional, authentic Japanese cuisine with the diverse flavors of Youki Food’s Chinese, ethnic, and Western-style seasonings.

Chef Enomoto of Shinjuku Nada-Man Binkan has fused Youki Food’s seasonings—which offer a rich palette of aromas, umami, body, acidity, and spiciness—with delicate Japanese culinary techniques. The result is a unique course where each dish, from sesame tofu and dobimushi to sea bream, Wagyu sirloin, and cold soba, offers a distinct expression.

'Miracle Feast Kohaku' emphasizes the refined taste of Japanese cuisine while using Youki Food’s distinctive seasonings as an accent.

For the first course (sakizuke), bamboo shoots simmered in dashi are served as fresh spring rolls paired with peanut XO-jan miso, adding a fragrant, ethnic twist to Japanese ingredients. The steamed dish features a dobimushi (steamed pot) with new onion and chicken broth, accented with lime, creating a gentle yet refreshing flavor profile.

Additionally, the Wagyu sirloin grilled dish is served with oyster miso dengaku, providing a luxurious depth of flavor. The meal concludes with cold soba topped with sakura shrimp tempura and a beef dashi chawanmushi.

To finish, guests are served Nada-Man’s famous original dessert, 'Gula Melaka.' This dish beautifully blends the mellow flavor of Gula Melaka—a Southeast Asian dark sugar made from coconut sap—with the fun texture of tapioca and traditional Japanese ingredients, perfectly rounding off the meal.

During the period, special collaboration drinks using traditional British cordials distributed by Youki Food will also be available. These drinks offer floral aromas and refreshing tastes that complement the dishes. *Collaboration drinks are charged separately.
