This parfait is supervised by Chef Tetsuo Ota, who hails from Hakuba Iwatake. The chef of "LA CASA DI Tetsuo Ota," known as a difficult-to-reserve restaurant, has prepared a special parfait for this season, featuring fresh blueberries harvested locally in Hakuba Village. The bitter taste of 70% cacao chocolate enhances the refreshing acidity of the blueberries.
Hakuba Village Fresh Blueberries: A Two-Month Limited Offer
The blueberries used are cultivated at "FARM HAKUBA Blueberry Garden," which has a history of over 40 years in Hakuba. The garden's blueberries have obtained Organic JAS certification and were selected for the athlete's village at the 2020 Tokyo Olympics and Paralympics due to their proven safety.
Additionally, the annual summer blueberry picking event is popular and attracts many visitors as an activity to enjoy Hakuba's summer. Blueberries grown in the nature of Hakuba, spread at the foot of the Northern Alps, have a good balance of sweetness and acidity due to the temperature difference between day and night, with rich flavor concentrated in each berry.

Chef Ota is known as a leading figure in cooking using Amazonian ingredients, with many fans of his highly sought-after restaurant. He also operates his own cacao farm in the Amazon, South America, practicing a sustainable food cycle with local producers. Based on his experience cultivated worldwide, including in the Amazon and Italy, he has proposed a unique food culture that enjoys dining as if traveling.
"&Deli" operates not only as a breakfast and dinner space for overnight guests but also as a deli-style restaurant that can be easily visited after skiing or other activities. In addition to dine-in, we also offer takeout menus, and non-staying guests are welcome to visit.
Moving forward, we will continue to offer unique dishes using Hakuba and Shinshu ingredients in collaboration with local producers.
